Meet Marcus and Steve
Marcus Dickman was born in Roswell and grew up in New Orleans where he spent many hours in his family's kitchen, experiencing Louisiana culture and cuisine firsthand. Marcus has more than 15 years of restaurant industry experience under his belt, including back and front-of-house positions for Dave & Buster's, California Pizza Kitchen, The Chart House and Pappadeaux Seafood Kitchens. In July 2020, Marcus debuted the brainchild of his own: Bayou'Q Bistreaux & Bar on Canton Street, a highly-awaited destination for house-smoked meats and authentic Cajun cuisine.
Steven has been instrumental in building Bayou'Q from the "ground up." As partner, he collaborates with Marcus to develop the menu and put systems in place to ensure the kitchen runs smoothly. Prior to opening, Steven utilized his hard-earned trade skills and put in countless hours – sanding and burning the tables, installing plumbing and electric – he even rebuilt an entire cooler by hand! Steven continues to work hard every day in the back-of-house, operating the kitchen like a well-oiled machine, and leading the Krewe by example to bring you delicious, authentic Cajun and BBQ cuisine.
